Go to General Settings, Accessibility
Tap Speak Selection and choose the speaking rate (to make Siri read clearly)
Go to iBooks, select Scroll in Themes (a button)
Select a word from which to make Siri start and scroll to any part you want
As the menu appears, tap Speak. Siri starts reading a book!
